Ingredients:
1 pound wild turkey, diced in 1 inch cubes
2 cups flour
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon smoked paprika
1/2 tablespoon cracked pepper
½ teaspoon dried oregano
¼ teaspoon sea salt
1 large egg beaten
1 ½ cup milk
3 cups cooking oil
Directions:
- Rinse turkey and pat dry, cut into 1 inch cubes and soak in milk for 15-20 minutes in fridge
- In large bowl combine all dry ingredients and mix completely
- Create an assembly line, turkey, flour, egg, flour, clean plate
- Heat oil over medium/ high heat
- Take your turkey from the milk dredge in flour, followed by egg, followed by flour and set on plate. Finish all turkey pieces and let rest for 1-2 minutes
- Add turkey to fryer in batches. Cook 3-5 minutes until turkey reaches 16o degrees and juices runs clear
- Let drain on paper toweled wire rack
- Serve with your favorite dipping sauce and enjoy
