Wild Turkey Jerky

6 pounds turkey breast

3 teaspoons garlic powder

6 teaspoons onion powder

5 teaspoons meat tenderizer

1 1/2 teaspoons black pepper

2 teaspoons ground mustard

2 cups soy sauce

2 cups Worcestershire sauce

1 1/2 cups burgundy or red wine

6 teaspoons liquid smoke


Semi-freeze turkey breast, which makes it easier for slicing. Slice into 1/4-inch-thick strips about 2 inches wide and 4 inches long. Combine all ingredients in a large bowl. Mix thoroughly, then add turkey strips. Marinate for 24 hours, turning meat occasionally. Drain brine. Place strips on paper towels and pat dry. Place in oven, dehydrator, or smoker. If using an oven, place strips on draining grates and set temperature to 150 F. Keep the oven door open a few inches. Place foil on the bottom of oven to catch drippings. Remove foil after 1 hour. Check meat after 3 hours, as some pieces may be done. However, it usually takes between 6 to 8 hours. Jerky should be chewy, not brittle.
